{tasty tuesdays} Lemon-Shrimp Linguine with Pesto Sauce

I made this for dinner one night last week, and I have to say this is a super easy recipe! It's pretty yummy too. Someday, I'd love to try making my own pesto and using that instead of store-bought-- you can't beat fresh pesto sauce. However, buying it pre-made really keeps it quick and simple.

Lemon-Shrimp Linguine with Pesto Sauce

1 package (9 oz.) linguine pasta, cooked according to package directions, drained, and kept warm

8 oz. raw medium shrimp*

lemon juice

1 container (7 oz.) refrigerated pesto with basil

1 1/2 tsp. grated lemon peel

2 tablespoons thinly sliced green onion

In a non-stick frying pan over medium heat, squeeze a bit of lemon juice (cut a wedge from the same lemon which you will be zesting). Add shrimp and cook, tossing frequently, until shrimp is just turned pink. Remove the shrimp from the pan into a dish, keeping warm. Next, combine pesto sauce and lemon peel in the same saucepan. Cook over medium-low heat, stirring frequently, for 6-8 minutes or until heated through. Transfer cooked pasta to serving plates. Top with heated sauce and warm shrimp. Sprinkle with green onion (I didn't do this, as you may have noticed, because I was out of green onions. Oops.)

*Note: you can use already-cooked shrimp, if you prefer, to make it even easier. Simply skip the shrimp-cooking step and instead stir it into the pesto sauce for the last couple minutes of heating to warm it, then serve as directed.

Um... can I say, YUM????????!!!!! I wish my family would eat such a thing... Andy touch pesto?? HA! I will have to make this for one of those nights when it's just me and enjoy it all for myself. ;)

Truth be told, Kourtni, my family was not overly fond of it either... maybe the two of us will have to have dinner together instead sometime!! :)

That looks yummy and pretty healthy! I'm not a fan or shrimp but maybe I could make it without? Hmm... I know, what is my problem not liking shrimp? I'm a weirdo. I only like it from Tahoe Joes in their railroad camp appetizer -- do you have a Tahoe Joes in Bakersfield?

Actually, and I forgot to include it in this post, but the recipe said you could substitute cut-up chicken breast instead of the shrimp if you want! So there you go, Sarah. :)
And yes, we do have a Tahoe Joe's here (we live like 3 minutes from it) and yes, their Railroad Camp Shrimp is THE BEST. Mmmm!!!!!

i'm not really into shrimp at all, but with chicken that would be so very scrumptious! i love pesto! and pasta is so my favorite food! yum yum yum.

Oh, and Haddad Dodge tinted my windows, it was part of the deal =/ so i really have no idea how much it would cost on its own but it looks GREAT!

Ok I am butting into to Talia and Ashlei's conversation, but just FYI it cost $300 to get my car windows tinted ... but it makes a huge difference in how hot the car gets, it helps baby Peyton stay shaded in the back! LOVE IT!
Talia ... I think before the holidays we should all have a recipe trading party with samples included! It would make a fun girls night =)

That looks so yummy. And this Shrimp from Tahoe Joes?? Really that good? I'll have to ask Cait to bring me home some one night.

And I agree tinting does cut the heat in the car a LOT.

Yum! Can I come too if you're hosting? ;) And yes, car tinting does help a lot. Your someday new(er) car might already be tinted, who knows? My car was pretty cheap to get it done, I think it was like $120 or so with a coupon in the phone book.
