{tasty tuesdays} Kentucky Biscuits


I have a lot of posting to catch up on, but I thought I'd better start off with a tasty tuesday... since I have missed the last TWO weeks!! Shame on me. But don't worry, I got a good scolding from Percy (remember?), who has noticed my blogging delinquency and been quite disapproving.

These biscuits are so easy, and quite possibly the yummiest bisciuts ever. I don't even remember the first time I had them, it was so long ago... my mom has made them many times over many years. When we lived in small-town Sutton, NE, I had a very dear friend named Sarah. She was the sweetest little thing, one of the very first girls to befriend me when we first moved there, and we would always spend Sunday afternoons hanging out at each other's houses between church and evening Bible study (she lived on a farm, it was so fun) doing things like baking and being ridiculously silly. Our families would also get together for dinner from time to time. Once, when we had her and her family over for dinner my mom made these biscuits. And Sarah absolutely loved them. They became one of her favorite things to make, and we always had them whenever she would come over. Over the years, Sarah and I have completely lost touch, much to my sadness, but to this day, I still cannot make these without thinking of her. Maybe that is one reason I love this recipe so much.


Kentucky Biscuits

2 cups all-purpose flour
2 1/2 tsp baking powder
1/2 tsp baking soda
dash salt
1 tbsp granulated sugar
1/2 cup butter
3/4 cup buttermilk

Mix first 5 ingredients in a large bowl. Cut in butter until mixture resembles coarse crumbs. Add buttermilk, and mix quickly to make a soft dough. Turn out onto floured surface. knead lightly. Shape into a 6x6 inch square (you can use a rolling pin, if you want), and cut into 9 or 12 even portions (depending upon how big you want them to be). Place onto ungreased baking sheets and bake at 400 degrees until golden, about 15 minutes.
If desired, rub with butter and dust with flour immediately after removing from oven.

Note: as you can see from the picture, I actually baked mine a in a pie plate. Why? Because my cookie sheets were all dirty from something I'd baked earlier and I was being really lazy. :) However, I found that the pie plate method worked just fine-- so try it either way you like.

Try these, and you never know-- maybe you will gain some biscuit-inspired memories of your own! It's so neat how food can be tied up in our lives and hearts in so many different ways.

OOh! Those sound so tasty! Yum! I really liked hearing the back story too- I'm sorry you've lost touch with your friend but it's nice you have such wonderful memories of her. Hee- Percy!

Those look delic! I've definitely never made biscuits and will give them a try if I can remember to buy buttermilk!

alyssa-- oh, don't buy buttermilk! I never do, because I use it for one recipe and then the rest sits in the fridge and goes bad. :) Just sour some regular milk by putting vinegar or lemon juice in it. use one tablespoon sour stuff and add enough milk to make one cup (I believe that's the proper ratio). Then let it sit for 5 minutes, and presto! Buttermilk, so to speak. :)
