These are so tasty, and they really do come together quickly. It's perfect for those nights when you want to feel like a bit of a gourmet (it's crab... how can you NOT feel gourmet?) without all the time and effort.
2 eggs
2/3 cup water
1 tsp. lemon juice (fresh-squeezed is best, of course)
2 cups stove top stuffing mix (for chicken)
2 cans (6 oz. each) crabmeat, drained and flaked
2 tbsp. butter (olive oil works too)
Beat eggs, water and lemon juice in large bowl. Add stuffing mix and crabmeat; mix lightly. Shape into 8 patties. Cook patties in melted butter in large skillet on medium heat for 5 minutes on each side, or until browned on both sides and thoroughly heated.
Serve with a garnish of lemon if desired.
Once, I made a cream sauce to go with them too, and it was delicious drizzled over the top! Try that option if you want to add a little bit more fat and calories. :)
