{tasty tuesdays} Our favorite enchiladas


This recipe might not be the fanciest when it come to enchiladas, but they taste really good and are super easy to make... so, that makes them a winner in my book. :)





Chicken Enchiladas

8-12 flour tortillas

grated cheese

Filling:

1 cup grated cheddar cheese

2 cups cut-up cooked chicken

1/2 cup chopped green onions

chopped canned black olives, optional

Sauce:

2 cans cream of chicken soup

1/2 tsp salt

1 cup sour cream

1-2 cans chopped green chilies

Fill tortillas with filling; top with sauce (2 or 3 tablespoons). Roll up and put in 9x13 inch pan. Top with remaining sauce and grated cheese (however much you want). Bake at 350 degrees until hot and bubbly, about 30 minutes.

This recipe fits perfectly in an 8x8 pan when halved, if you don't have many people to feed. Or, make the whole batch and put it in two pans so you can freeze one for an easy meal later!

Ohhh, I've never made enchaladas before, they look yummy!

Okay those look so good. We have these precooked chicken cubes, and I think this may be the perfect solution. We would probably add jalapeƱos though; I was majorly craving some last night. Random, but this would be the perfect solution.

So I'm probably make a stop by the store on the way home. I'll let you know how it goes!

I have almost the exact same recipe and it is one of my favorites too. I can't make it a whole lot though because it bothers Stephen's tummy. I just might be making these tonight though because I've been needing some major inspiration in the cooking department.

okay I failed this evening. instead we had sandwiches at Fry's in between staring at televisions (we're shopping around). Definitely not as glamorous, but Cale did see your picture of the enchiladas and insists that we make them this week (which will probably end up being this weekend..)

So I forgot that last night was church and I don't have to cook that night, but I am making them tonight... well I didn't use your recipe, I used the one I've made a bazillion times that is almost the exact same. I even found this pre-cooked shredded chicken so I could be even more lazy. Ha!
